Tortillas

Welcome to the Gluten Free Tortilla Class! This class will completely change the way you think about tortillas. You’re going to be amazed at how good homemade tortillas are.

Goal:

Your goal for this class is to make a batch of tortillas – either the corn of the flour – and then use those tortillas in a meal.

What To Expect:

The tortilla class works on completely different set of skills than we used in Gluten Free Bread 101. Tortillas are very simple, as far as ingredients, but provide a great opportunity to work on dough handling. Here’s a quick overview of the skills you’ll be developing.

Skill 1: Forming Dough Into A Ball

Both of the tortilla doughs need to be rolled into a small ball in your hand before we flatten them. If you’ve been baking for many years, then you’ve probably already mastered this skill. That’s okay. Rolling balls of dough is still fun =) You could also increase the difficulty (and fun) of this level by finding some children who want to make dough balls too.

If you haven’t done much baking, then you’ll be learning to pinch off an appropriately sized piece of dough and form it into a smooth sphere in your hand.

Skill 2: Rolling Dough Into A Circle

If you choose to make the flour tortillas, then you’ll get to work on your rolling pin skills. Rolling dough is a learned skill! Do not expect this to go perfectly the first, second, third, or even fourth time. Thankfully misshapen tortillas still taste good, which is why we practice rolling skills with this recipe. Expect it to not go perfectly and be prepared to laugh about it =)

If you’re working through this class with the July 300 cohort, aim to complete this class by August 15th. We’ll work on gluten free bagels during the latter half of the month.

Session 2: Making Your First Tortillas

During session 2 your only focus should be making the tortillas. We’re not going to worry about using them in a complex recipe or meal. Plan to have quesadillas or tacos for a relatively simple meal.

Extra Challenge:

Make the tortillas again, but this time increase the complexity of the recipe that you use the tortillas in. Perhaps you’d like to make your favorite enchiladas or recreate the burritos from your favorite Mexican restaurant.
