I am allergic to eggs as well as wheat.
Do you have an eggless variation of this recipe?

Hi Catherine, You can use this recipes and just substitute flax eggs for the chicken eggs in the recipe. 1 flax egg = 1 Tbsp. ground flax seed + 3 Tbsp. hot water. I’m making a note right now to do a short video of how to make a flax egg and how to grind flax seed at home.

These waffles are light, crisp and better than other recipes I have tried. Yum.

Is the butter measurement correct? 1/2 cup of butter? Seems like an awful lot. I made it with 4 TB and they did not get crisp or very fluffy. 🙁

    • Mary Frances says:

@Gaile: the large amount of butter is correct, especially if you want crisp waffles. The high-fat batter causes the waffle to fry in the griddle, rather than steam. Frying yields a crisp; steaming does not. Due to the high fat, we definitely do not eat these waffles on a regular basis! They are a nice treat though for a weekend breakfast.
